Entire bag Udi’s Chocolate Chip Cookie mix
1/2 cup softened unsalted butter*
1 egg*
1/2 tsp gluten free vanilla
3 tbsp honey

Preheat oven to gas mark 3/170°C. Line 2 baking trays with parchment paper. In a mixing bowl pour entire bag of mix. Add butter, egg and mix until mixture is crumbly, for 2 minutes. Add vanilla and honey, beat about 3 minutes. Roll dough into 1 1/2 inch balls and set 2 inches apart on cookie sheets. Bake 15 -18 minutes or until cookies are golden. Remove and cool. Makes approx. 22 - 25 cookies. These freeze well.
Note: For thicker cookies, chill dough for at least 2 hours before baking.

Double Chocolate Mocha Cookies

¼ cup sweetened cocoa powder
1 tablespoon instant coffee granules
2/3 cup softened, unsalted butter*
2 eggs*
2 tsps gluten free vanilla

Preheat oven to gas mark 3/170°C. Line 2 cookie sheets with parchment paper. Mix cocoa powder and coffee granules. Set aside. In a separate bowl, beat butter until fluffy. Add dry ingredients. Beat until mixture is light and fluffy. Beat in eggs and vanilla. Drop tablespoons of dough onto baking tray. Leave about 2 inches between cookies. Bake 12 minutes. Cool completely and transfer to an airtight container. Makes 4 dozen cookies.
* you may adapt the recipe to suit your needs by using an equal amount of a substitute ingredient.

But this cookie mix (which is so so easy) makes really nice gooey cookies that are crunchy on the outside and are the best gf cookies my coeliac partner or I have eaten so far. 16 June 2016
