Tree of Life Mung Beans are small, tender, slightly sweet beans which can be used in a variety of dishes from soups and stews to curries. A rich source of plant-based protein, they're especially useful to boost the nutrition of vegetarian and vegan dishes. Mung beans also quickly sprout and are a popular source of beansprouts.
Soak in cold water for 8 hours or overnight. Drain, rinse and add to a pan of water. Bring to the boil and simmer for 45 minutes until tender.

Store in a cool dry place. Once opened, store in an airtight container. Soak in cold water for 8 hours. Drain and rise, cover with fresh water (allow 3 cups water to 1 cup beans). Bring to the boil and simmer for 20-30 minutes
