- 50g oats
- 1 tsp chia seeds
- 200ml Kefir drink
- 100ml plant-based milk, such as almond or coconut
- 1 tbsp honey (or maple syrup)
- 1 banana
- 2 chopped fresh apricots
- a pinch of ground cinnamon 1⁄2 tsp vanilla extract
- 1 tbsp nut butter
- 1 tbsp coconut flakes or granola
Combine the oats, chia seeds, coconut kefir drink and plant-based milk in a jar or bowl and stir through the maple syrup. If you are using cinnamon and vanilla, stir these through now, too. Cover and leave in the fridge overnight.
The next morning add chopped banana and apricot (or any fresh fruit you are using) into the bottom of the jar to serve.
Now add the oats mixture and top with more fruit and nut butter and coconut flakes or granola. If you want to make your oats a little thinner, stir in a splash more milk before adding to the jar to serve.
