Pinto Bean Curry

Ingredients

    • 2 tsp coconut oil *
    • 1 cup pinto beans, soaked overnight
    • 1 red onion, finely chopped
    • 2 cloves garlic, minced
    • 1 can (400g) chopped tomatoes
    • 80g baby spinach
    • 1 tsp garam masala *
    • 1 tsp coriander powder
    • 1 tsp curry powder *
    • 1 tsp cayenne powder
    • Pinch of salt
    • ½ cup water

Method

Step 1.  Boil soaked beans for 1 hour. Step 2. Sautee onion and garlic in coconut oil until onion becomes clear, approximately 10 minutes. Step 3. Add chopped tomatoes, beans, spices and water. Leave to simmer for 20 minutes on low medium heat. Step 4. Before serving, add spinach leaves and heat for 5 minutes until leaves have wilted.
