Add all the ingredients, except the pistachios, to a food processor. Pulse until evenly combined and the mixture starts to come together into a ball. Blitz a little longer if needed.
Divide the mixture into 12 even portions (around 20g each) and roll into smooth balls.
Roll each ball in the crushed pistachios to coat and create a crunchy outer shell.
Place in the fridge for at least two hours, or ideally overnight, to firm up. Store chilled for up to seven days.
