Makes: 8-9 cookies

Ingredients

Method

  1. Preheat the oven to 180 C (fan).
  2. In a large bowl, mix together the oat flour, rolled oats, collagen, baking powder, cinnamon and mixed spice.
  3. In a separate bowl, whisk together the eggs, honey and vanilla essence.
  4. Pour the wet ingredients into the dry, and mix thoroughly.
  5. Add the chopped walnuts, raisins and grated carrots and mix until evenly distributed.
  6. You should have a thick mixture which you can roll in your hands.
  7. Take the mixture and roll it into 8 or 9 balls.
  8. Lay the balls onto a baking tray lined with parchment paper, and gently press to flatten them slightly.
  9. Bake for around 15-20 minutes until golden, and remove from the oven, leaving them to cool fully.
  10. Melt the white chocolate in short bursts in the microwave, or over a pan of boiling water, and drizzle over the cooled cookies.
  11. Enjoy!
