Ingredients
- 120g feta
- 1 tsp olive oil
- 1 tbsp lemon thyme leaves
- 1 tbsp oregano leaves *
- 1 red chilli, finely diced
- Salt and pepper
- 3 tbsp Manuka honey MGO 40 *
- 12-16 thin slices seeded or rye bread *
Method
Step 1.
Preheat the oven to 200ºC /180ºC fan/ gas mark 6. Carefully dry the feta, place it in a small baking dish and drizzle over the olive oil. Sprinkle over the herbs and chilli with a little salt and pepper, then pour over the honey.
Step 2.
Place in the oven and bake for 15-20 minutes or until golden. While the feta is baking, grill the sliced bread until golden and crisp. Once the cheese is cooked, serve immediately with the crisp breads.
