Garnished with peppy lemon thyme, this baked feta with manuka honey makes a showstopping vegetarian dish.
Feta is usually crumbly, but it turns creamy and silky in the oven. Made from sheep’s or goat’s milk, it’s a lower-fat alternative to most other cheeses.
We recommend serving with salad and plenty of crusty wholegrain bread to dunk.

1 tsp olive oil
1 tbsp lemon thyme leaves
1 tbsp oregano leaves
1 red chilli, finely diced
Salt and pepper
3 tbsp Manuka honey
12-16 thin slices seeded or rye bread

Preheat the oven to 200ºC /180ºC fan/ gas mark 6.

Carefully dry the feta, place it in a small baking dish and drizzle over the olive oil. Sprinkle over the herbs and chilli with a little salt and pepper.

Place in the oven and bake for 15-20 minutes or until golden.

While the feta is baking, grill the sliced bread until golden and crisp.

Once the cheese is cooked, drizzle over the manuka honey and serve immediately with the crisp bread.
