Ingredients
4 small or 2 large sweet potatoes
1 tbsp vegetable oil
1 pack vegetarian Bolognese ragu
A handful of kale, stalks trimmed and torn into bitesize pieces
Toss the sweet potatoes in the oil and add to the heated oven for 25-40 minutes, until the skin is crispy and the inside soft. Meanwhile put the ragu into a pan and when the sweet potato is 5 min away put onto a medium heat.

Add the kale to a pan of boiling water and blanch until soft.

Dry the pan and add back to the heat.

Add the oil and when warm put in the garlic and chilli. Stir continuously until the garlic starts to turn golden

Add the kale back to the pan, stir ensuring the kale is covered in the chilli and garlic oil.

Serve the ragu on top of the sweet potato, with the kale on the side. Enjoy!
