Smashing the balls is an option. We love it because when you pan fry them, they will crisp up really well. Otherwise, you can just pan fry them whole!

Using a rolling pin, lightly smash the balls so they hold the shape of a fat burger.

Put a frying pan over a medium heat and add the balls. If squashed, take some care to cook without breaking them up, it should take about 4 min on each side. If using whole, then cook following the packet instructions.

To make the carrot salad; with a fork whisk together the kefir, oil and vinegar.

In a separate bowl, mix together the seeds and carrots, then toss into the kefir dressing.

Meanwhile, spread the houmous evenly on the bottom of a flat serving platter.

When the balls are cooked, gently take out of the pan and sit them on some kitchen paper. Pat dry and pile them up in the middle of the platter, on top of the houmous.

To finish off, sprinkle or the ruby kraut, the seeds and the kraut and a dollop of carrot salad on the side.
