Ingredients
- 2 1/2 cup flour (gluten free, plain) *
- 1/2 cup almond flour *
- 2 tbsp flaxseeds *
- ½ tsp ground ginger *
- ½ tsp sweet mixed spice *
- 1 tsp ground cinnamon *
- ¼ tsp turmeric *
- ¼ tsp baking soda
- ½ cup coconut sugar *
- 1/3 cup maple syrup *
- 6 tbsp hot water
- ½ cup coconut oil *

Method
Step 1
Mix together all the dry ingredients. Add the maple syrup and hot water and mix with the coconut oil.
Step 2
Knead of all the ingredients until well combined into a ball of dough
Step 3
Flour your working surface. Roll the dough out evenly and use cookie cutters to make your desired gingerbread men shapes
Step 4
Place the gingerbread men on to baking trays and bake for 15 minutes in pre-heated (180C) oven for about 15 minutes (or golden in colour). Leave to cool before decorating with with vegan dark chocolate.
