This granola might look indulgent – but it’s actually 100% vegan. Delicious with dairy-free yogurt and fresh berries, it will keep in a sealable container for up to two weeks

Ingredients
- 2 tbsp coconut oil *
- 100ml maple syrup *
- 150g mixed seeds *
- 100g pecans, roughly chopped *
- 200g rolled oats *
- 25g coconut flakes *
- 80g vegan dark chocolate (87% cocoa) chopped into small chunks *
To serve:
- 150ml dairy-free yoghurt
- 200g mixed berries

Method
Step 1. Preheat the oven to 180°C/160°C fan/gas 4. Step 2.Mix the coconut oil and maple syrup with the mixed seeds and pecans. Add the oats and stir well.
Step 3.Spread the mixture onto 1 large or 2 smaller baking trays, and bake in the oven for 15 minutes.
Step 4.Mix in the coconut flakes and return to the oven for a further 10-15 minutes, or until crisp and golden.
Step 5.Remove from the oven. Allow to cool completely before adding the dark chocolate. Serve with dairy-free yoghurt and mixed berries. Keeps in a sealable container for up to 2 weeks.
