Preheat the oven to 180°C (fan) and lightly grease two small ramekins.
In a blender or food processor, combine the avocado, almond flour, cocoa powder, coconut sugar, egg, vanilla extract, salt and baking powder. Blend until smooth and creamy.
Divide the batter evenly between the prepared ramekins and smooth the tops.
Press one piece of dark chocolate into the centre of each ramekin, pushing it down so it’s fully submerged.
Bake for 12–14 minutes, until the edges are set but the centre remains soft and molten.
Allow to cool for two to three minutes, then serve warm for the full gooey lava effect.
