Make thick and creamy Skyr-style yoghurt at home with Freshly Fermented Organic Skyr Yoghurt Starter Culture.
Inspired by traditional Icelandic-style cultured dairy, this heirloom starter culture produces a smooth, thick yoghurt with a fresh, mildly tangy flavour. For the characteristically dense Skyr-style texture, the finished yoghurt can be strained to remove excess whey and create an even thicker consistency.
Unlike single-use, direct-set yoghurt starters, this is a reusable heirloom culture. Simply reserve a small amount from each successful batch to culture the next. With regular re-culturing and proper care, a single starter can be maintained and used to make homemade Skyr-style yoghurt indefinitely.
Supplied in a convenient freeze-dried format, the starter can be stored at room temperature before activation and has a shelf life of approximately two years.
Once activated, simply continue the culture from batch to batch, giving you an economical and sustainable way to enjoy freshly made Skyr-style yoghurt at home without needing to purchase a new starter each time.
Full activation, culturing, straining and re-culturing instructions are included, making it suitable for beginners and experienced home fermenters alike.
Activate the freeze-dried starter according to the included instructions.
Once activated, add the required amount of starter to prepared milk and incubate at the recommended temperature until the yoghurt has cultured and set.
For a thicker Skyr-style consistency, strain the finished yoghurt through a suitable yoghurt strainer, cheesecloth or fine filter to remove some of the whey.
Before adding fruit, honey, sweeteners or other flavourings, reserve a small amount of fresh, unflavoured yoghurt to use as the starter for your next batch.
By repeating this process and caring for the culture correctly, your heirloom starter can be maintained from batch to batch indefinitely.
