Pearl Barley is a timeless grain that has been harvested in Berwick-Upon-Tweed for centuries. In fact, the very name Bere-Wic means Barley Village in old Saxon. This nutritious grain can be cooked and enjoyed in various ways. You can simmer it in a savoury broth, create a creamy texture and comforting barley risotto, or enrich stews and casseroles.

Directions:

Rinse, bring to the boil then simmer until tender (about 45 minutes). Speed up cooking by pre-soaking for a few hours.
