Quick and easy Christmas cupcakes recipe

Little ones will love helping decorating, and eating, these cute little cupcakes

These simple cupcakes are as easy as it gets, making them perfect for kids of all ages. Get them to help weigh the ingredients and make the mixture as well as use their creative side in the fun decorating stage. Choose from food colouring, silver balls, chocolate stars, buttons, jelly sweets or anything else your family love!

Ingredients


Cupcakes:

  • 280g self-raising flour *
  • 175g golden caster sugar
  • 175g soft unsalted butter
  • 150g fat-free plain yogurt
  • 3 eggs
  • 1 tsp vanilla extract

Icing and decorating:

  • 85g soft unsalted butter
  • 1 tsp vanilla extract
  • 200g icing sugar
  • Green and red food colouring
  • Jelly sweets
  • Sprinkles
  • Silver balls
  • Mini chocolate buttons
  • Chocolate stars

Method


Step 1.
Place all the cupcake ingredients into a large bowl and combine with a spoon. Whisk the mix until light and fluffy.

Step 2.
Spoon evenly into 12 silicone muffin cases or 12 paper cases placed in a 12-hole muffin tin. Bake at 190˚C for 25 minutes or until golden brown. Cool in the tray for five minutes before transferring to a wire rack.

Step 3.
Make icing by beating the butter, vanilla extract and icing sugar together until pale. Divide it into three bowls and add a different food colouring to two, leaving one plain.

Step 4.
Decorate the cupcakes with your favourite toppings and then dig in!
