Preheat the oven to 180°C. In a large mixing bowl, toss the sliced peaches with the sugar, cornflour, vanilla extract and cinnamon until the fruit is evenly coated. Pour the peach mixture into the bottom of a baking dish and spread out evenly.
In a separate bowl, whisk together the ground almonds, gluten-free rolled oats, baking powder, sugar and salt until combined.
In a small jug, whisk together the melted butter or coconut oil, Greek yoghurt and egg until smooth. Pour the wet mixture into the dry ingredients and stir until everything comes together to form a thick, sticky dough.
Using a spoon, drop large dollops of the biscuit dough over the peaches, leaving some gaps so the fruit can peek through as it bakes.
Bake for 30-35 minutes until the peach juices are bubbling around the edges and the almond oat topping is deep golden brown.
Leave the cobbler to cool for 10 minutes before serving. Enjoy warm with a scoop of vanilla ice cream, a dollop of yoghurt or your favourite dairy-free alternative.
