Melt the dark chocolate and the honey in a bowl suspended over a saucepan of water, making sure that the bowl does not touch the water. Keep the heat low so that the chocolate melts slowly to avoid it seizing and becoming thick and lumpy.
Put the Brazil nuts and the orange zest into a bowl, pour over the chocolate and mix well to combine.
Spoon teaspoons of this mixture onto baking paper then scatter over the finely slicedBrazil nuts.
Continue until the mixture is all used up.
Let set, then store in an airtight container.
